    Salmonid Salad

    If you add nothing more than oil and vinegar as a salad dressing, then don't forget a generous squeeze of lemon or lime juice. This really makes the fish pop!



    You all know how to build a salad so let's cut to the chase:

    1lb of smoked salmon, trout or steelhead - this should be enough feed to deflect two hungry people from foraging snacks an hour later.

    Buy the finished product smoked and packaged or, soak raw, thawed, fish in a brine solution 6 hours to overnight.

    At least 3 hours of smoke and another 5 or more of continuous drying time in the smoker.* Longer smoking and drying times if the fish is hanging in your walk-in utility shed/smokehouse.

    Alder smoke is very special indeed, but a little bit of Mesquite or Apple wood will lessen the chance of there being a single overwhelming flavor.

    Use plenty of greens because 1/2 lb of smoked fish is more filling than it looks and it's easy to end up chewing on nothing but the fish 3/4 of the way through the meal.

    Russian Tea Cakes:

    1 cup softened butter or margarine
    1/2 cup powdered sugar
    1 teaspoon vanilla
    1/4 teaspoon salt
    2 1/4 cups all purpose flour
    3/4 cup finely chopped walnuts
    additional powdered sugar

    In a large bowl combine first 6 ingredients on low speed of mixer about 1 minute. Blend well. Gradually add flour at low speed until just combined; stir in nuts. Roll dough into 1 inch balls; place about 1 inch apart on ungreased cookie sheet.

    Bake at 350 F for 8-10 minutes until firm to the touch but not brown. Do not overbake. While warm, roll in additional powdered sugar. Cool; re-roll in powdered sugar before serving.

    Haven't run into this thread until just now. I think it is kind of funny how the very first entry was food....and then we went to beverages right away lol. I'll have to save this one in my memory bank. I would love to add to it.

    Margaritas - After just about any of those recipes, you'll want 2-3 of these to finish off the meal!

    Ingredients: 1 (6 ounce) can frozen limeade concentrate, 6 fluid ounces tequila, and 2 fluid ounces triple sec.

    Directions: Fill blender with crushed ice. Pour in limeade concentrate, tequila and triple sec. Blend until smooth. Pour into glasses and serve.

    For the record: I skip happy hour at the cantina and disinfect my hands with lemon juice after trimming and shoeing horses most of the day, then start in on a homemade meal.
