A couple job questions/Any experience in 73XX?

I had a couple questions as far as jobs (although I do know your job comes second to being a Marine...)

When it comes to job selection--how does that work correlating with your ship date? If you want OccField XYZ, can you opt to push your ship date a month or so to get it or is it more of once you have your ship date (you get that at MEPS? (Finally going this week)) you take what is available?

I read a lot of raves about Combat Engineer--there's quite a few entry-level MOSs in 13XX, so is getting Combat Engineer just luck of the draw? I was also wondering if anyone had any experience in the 73XX field?
