What is the difference between going to Marines Infantry UV or UW contract?

First off, i spoke to my recruiter and my ship out date is 20130122. The problem is that i chose my 3 jobs (Infantry UV, Infantry UW, MP) but there are no spots according to my recruiter. So can i change my ship out date or is that not up to me? I dont want to leave without getting at least one of the top two.
ALSO!
What is the best contract to choose if i want to go into FAST Co.? UV or UW? What are differences between both?
